Gourmet Every Day

Our Live-In Chef

the raw materials

One of our attendants takes care of all the canine catering at Le Ripe. I must admit he's conscientious, generous with the portions and aware that we prefer chunky bits to mush.

not mad about veg, but pumpkin is nice

To thank him for his service, this post is dedicated to his weekly preparation of our favourite meal, breakfast.

(Supper is just kibbles; good quality kibbles, but boring kibbles nevertheless. We cut him some slack since breakfast is truly top-class.)

First, he chooses prime beef for bollito, which is a dish of boiled beef Italians are fond of. This is human-grade meat - no off-cuts and cheap cuts for us! He chops up the beef into nice chunks so we have something to chew on.

Next he chops potato, sweet potato or pumpkin, carrots and zucchine, quite small because, apart from sweet potato and pumpkin, vegies aren't our preferred ingredients. To the meat and veg he adds the same weight of pasta (again, human-grade, non of your cheapo stuff with weevils included). He cooks it all in his instant pot. When we smell the meaty aroma is when the saliva starts flowing. We usually come into the kitchen around this time.

He divides it into portions for the week and then we're in business.

our breakfast is always served with a drizzle of the best olive oil

(And if we hang around long enough on dogfood day, we often get a bonus aperitivo too. Hehe.)
